  • 1 cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar (gently packed)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • ¾ tsp salt
  • ¾ tsp baking soda
  • ½ cup semi-sweet chocolate chips
  • 1 cup mini vegan marshmallows
  • 2 regular-sized chocolate bars (Hershey's or your favorite)

Instructions

  1. Preheat your oven to 375°F and line a 13×9-inch pan with parchment paper.
  2. Arrange graham crackers in a single layer at the bottom of the pan.
  3. In an electric mixer, cream together butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla, mixing well.
  4. Whisk together flour, salt, and baking soda in a separate bowl. Gradually add to the butter mixture along with chocolate chips and mini marshmallows.
  5. Spread the dough evenly over the graham cracker layer and press down gently.
  6. Bake for 25-30 minutes or until golden brown. Remove from oven and immediately top with chocolate bar pieces while still warm.
  7. Allow to cool before lifting out of the pan and cutting into squares.
