  • 2 cups water
  • 2 tsp loose-leaf smoky black tea (or 2 tea bags)
  • 1 cup milk (dairy or non-dairy)
  • 45 black peppercorns
  • 3 whole cloves
  • 3 green cardamom pods, slightly crushed
  • 1 cinnamon stick
  • 12 tbsp brown sugar (adjust to taste)
  • 1 star anise (optional)

Instructions

  1. In a pot, bring water to a boil. Add black peppercorns, cloves, cardamom pods, and cinnamon stick. Simmer for about 5 minutes.
  2. Add smoky black tea to the pot and steep for another 3-4 minutes.
  3. Stir in milk and brown sugar, allowing the mixture to simmer on low heat for an additional 3-4 minutes.
  4. Strain the chai into mugs using a fine mesh strainer and serve hot.
