  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Prepare the cucumbers by washing them thoroughly and chopping them in half. Smash each half gently with the flat side of a knife until they crack open. Cut into bite-sized pieces and place them in a bowl.
  2. Chop the avocado into cubes and fold it gently into the bowl with the cucumbers.
  3. Add crumbled feta cheese, chopped pistachios, dill, and chives to the bowl.
  4. In a separate small bowl or jar, whisk together extra virgin olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until well combined.
  5. Pour the dressing over the salad mixture and toss gently to combine everything evenly.
