  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash and dry the cucumbers. Cut in half lengthwise and gently smash each half with the flat side of a knife. Chop into 1-inch pieces.
  2. Peel and chop the avocado into bite-sized pieces; add to the bowl with the cucumbers.
  3. Mix in feta cheese, pistachios, dill, and chives.
  4. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until well combined.
