  • 1.5 lbs boneless, skinless chicken breasts or thighs, trimmed of excess fat
  • 1 large yellow onion, finely chopped
  • 46 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning (or a mix of 1 tsp dried oregano, 1 tsp dried basil, 1/2 tsp dried thyme, 1/2 tsp dried rosemary)
  • 1/2 teaspoon dried rosemary (if not using in Italian blend)
  • 1/2 teaspoon dried thyme (if not using in Italian blend)
  • 1/4 cup fresh parsley, chopped, divided
  • 4 cups low-sodium chicken broth
  • 2 tablespoons olive oil or avocado oil
  • 1.5 cups uncooked orzo pasta
  • 4 oz cream cheese, softened and cut into cubes
  • 3/4 cup freshly grated Parmesan cheese, plus extra for serving
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Fresh lemon zest from 1/2 lemon (optional)

Instructions

  1. Sear chicken in olive oil until browned; set aside.
  2. Sauté onion and garlic until soft. Stir in herbs.
  3. Deglaze with white grape juice (if using), then add the chicken back.
  4. Pour in broth and sprinkle half of the parsley over the top.
  5. Cook on LOW for 5-7 hours or HIGH for 3-4 hours until the chicken shreds easily.
  6. Shred chicken, stir in uncooked orzo, then mix in cream cheese and Parmesan until creamy.
  7. Garnish with remaining parsley before serving.
