  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • Salt and black pepper to taste
  • Fresh parsley, chopped
  • Deli chicken
  • Fresh basil leaves
  • Shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat; sauté onion and bell pepper until translucent (about 5 minutes). Add minced garlic and sauté for an additional minute.
  3. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, pepper, parsley, and sautéed vegetables. Mix until well combined.
  4. On parchment paper, shape the mixture into an 8"x15" rectangle.
  5. Layer deli chicken slices, fresh basil leaves, and shredded mozzarella on top.
  6. Roll the meat mixture tightly using parchment paper as support; seal the edges.
  7. Place on a baking sheet and bake for one hour.
  8. Allow to rest for 10 minutes before slicing.
