  • 250 g all-purpose flour
  • 100 g butter (or lard)
  • 100 ml boiling water
  • 400 g ground lamb (or beef)
  • 1 tsp finely chopped onion
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 egg (for brushing)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, melt butter with boiling water. Pour over flour mixed with half the salt; stir until combined and let cool slightly. Knead into a smooth pastry.
  3. Mix ground meat with onion and spices in a bowl until well combined.
  4. Roll out pastry on a floured surface; cut circles for pie bases and tops.
  5. Line muffin tins with pastry rounds, fill generously with meat mixture, moisten edges with water, and seal.
  6. Brush tops with beaten egg and bake for 30-35 minutes until golden brown.
  7. Cool briefly before serving.
