  • 1 pound chicken sausage, sliced
  • 1 ½ pounds baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 cup fresh spinach (optional)
  • Fresh parsley for garnish

Instructions

  1. Parboil the baby potatoes in salted water for about 8-10 minutes until fork-tender. Drain and set aside.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil and cook the sliced chicken sausage until browned on both sides (about 4-5 minutes). Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté diced onion and minced garlic for about two minutes until fragrant. Add sliced bell pepper and continue cooking for another 3-4 minutes.
  4. Stir in parboiled potatoes along with smoked paprika, Italian seasoning, salt, and pepper. Cook for about 5-7 minutes until potatoes are golden brown.
  5. Return the chicken sausage to the skillet and mix well with the vegetables. If using spinach, stir it in during the last two minutes of cooking until wilted.
  6. Garnish with fresh parsley before serving hot.
