  • 1/3 cup light brown sugar, packed
  • 32 ounces cream cheese, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 3 cups cinnamon graham cracker crumbs
  • 1 and 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/8 tsp allspice
  • 12 tsp lemon juice (to taste)
  • 2 tsp cornstarch
  • 2 tsp water
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned whole rolled oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp cinnamon (for crumble topping)
  • 1/8 tsp salt (for crumble topping)
  • 1/4 cup cold salted butter, cubed (for crumble topping)
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tbsp salted butter, cubed (for caramel sauce)
  • 1/2 cup + 1 tbsp heavy cream (for caramel sauce)
  • pinch of flaky sea salt (for caramel sauce)

Instructions

  1. Preheat oven to 350°F. Prepare a 9-inch springform pan with nonstick spray.
  2. In a medium pan, combine peeled and sliced apples with butter, brown sugar, spices, and cook until tender.
  3. For the crust, mix graham cracker crumbs with melted butter and press into the pan; bake for about 10 minutes.
  4. Beat cream cheese until smooth, gradually adding sugar and eggs one at a time. Mix in sour cream and spices.
  5. Layer half of the cheesecake batter over the crust, add apple filling, then top with remaining batter.
  6. Set the pan in a water bath and bake for 90-110 minutes until set but slightly wobbly in the center.
  7. Cool gradually in the oven before chilling overnight.
  8. Top with crumble topping and drizzle with salted caramel before serving.
