1 lb ground beef (80% lean)
½ cup breadcrumbs
1 egg
¼ cup milk
1 small onion, finely chopped
1 teaspoon garlic powder
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
½ teaspoon thyme (optional)
4 large russet potatoes, peeled and cubed
¼ cup butter
Salt and pepper to taste
¼ cup sour cream (optional, for extra creaminess)
Instructions
In a large bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, and pepper. Mix thoroughly to create tender meatballs with great flavor, then roll into 1-inch meatballs.
Heat olive oil in a large skillet over medium heat. Fry the meatballs in batches until browned on all sides for about 7-8 minutes.
In the same skillet, melt butter over medium heat. Add sliced onions and cook until golden brown, about 5 minutes. Stir in flour for another minute, then gradually whisk in beef broth, balsamic vinegar, Dijon mustard, thyme (if using), salt, and pepper. Simmer until thickened, about 5-7 minutes.
While the gravy simmers, boil peeled and cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot, then mash with butter, milk, sour cream (if desired), salt, and pepper until smooth.
Serve the meatballs over the creamy mashed potatoes topped with gravy.
