  • 1 ¼ tsp active dry yeast
  • 1 tsp honey
  • 1 ¼ c warm water
  • 2 ½ c bread flour
  • 2 tsp sea salt
  • ¼ c extra-virgin olive oil (divided)
  • 2 tbsp melted butter
  • 2 tbsp finishing salt
  • 1/3 c extra virgin olive oil (for topping)
  • 23 sprigs fresh rosemary (minced)
  • 3 garlic cloves (minced)

Instructions

  1. Combine warm water, honey, and yeast in a bowl; let sit for 5-10 minutes until frothy.
  2. In a large bowl, mix bread flour and sea salt. Create a well and add the yeast mixture along with ¼ cup olive oil. Stir until combined and knead until smooth.
  3. Place dough in an oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  4. Punch down the dough and divide it into 12 portions; shape into balls and place in a greased muffin tin.
  5. Mix melted butter with minced garlic and rosemary. Brush over muffins before baking.
  6. Preheat oven to 400°F (200°C). Bake muffins for about 20 minutes or until golden brown.
