  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, whisk together olive oil, minced garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper.
  2. Place the chicken in a resealable bag or bowl; pour the marinade over it. Seal tightly and marinate in the fridge for at least one hour (overnight for best results).
  3. Preheat oven to 375°F (190°C).
  4. Transfer marinated chicken to a roasting pan; add quartered onions and pour chicken broth around it.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches at least 165°F (75°C). For crispy skin, broil for an additional few minutes if desired.
  6. Let the chicken rest for about 10-15 minutes before carving.
