  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C). Roast the garlic (cut off the top, drizzle with olive oil, wrap in foil) for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Peel and thinly slice potatoes using a mandoline slicer for even thickness.
  4. Layer potato slices upright in the greased dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of parmesan cheese, thyme, nutmeg, salt, and pepper until well-blended without boiling.
  6. Squeeze roasted garlic into a paste and mix into the creamy mixture.
  7. Pour the creamy mixture over potato layers evenly and cover tightly with foil.
  8. Bake for about 40 minutes; remove foil and add remaining shredded cheese on top.
  9. Bake uncovered for another 30 minutes until bubbly and golden brown.
