Ingredients

Scale
  • 4 cloves garlic (minced)
  • 3 cups reduced sodium beef stock
  • 2.25 lbs boneless beef chuck (cut into 2-inch cubes)
  • 1 lb baby potatoes (halved if large)
  • 4 carrots (cut into chunks)
  • 1 large yellow onion (diced)
  • 2 tablespoons olive oil
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef cubes until browned, then set aside.
  2. In the same pot, sauté onions until translucent (about 5 minutes). Add garlic and cook for 30 seconds.
  3. Stir in flour and deglaze with dry apple vinegar, scraping up any browned bits.
  4. Return the beef to the pot, add beef stock, tomato paste, thyme sprigs, bay leaf, potatoes, carrots, salt, and pepper.
  5. Bring to a gentle boil; reduce heat to low and cover. Simmer for about 2 hours until the beef is tender.
  6. Taste and adjust seasoning as needed before serving. Garnish with fresh parsley.
