  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk, at room temperature

Instructions

  1. Prepare the streusel topping by mixing cold butter, brown sugar, flour, and salt until crumbly.
  2. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  3. Combine melted butter with granulated sugar; add eggs one at a time followed by vanilla and pumpkin puree. Stir in buttermilk.
  4. Fold wet ingredients into dry ingredients until just combined.
  5. Preheat oven to 350°F (175°C), fill muffin tin with batter, top with streusel, and bake for about 20 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes in the pan before transferring to a wire rack.
