- 1 cup brown sugar
- 1 cup all-purpose flour
- 1/4 tsp salt
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp pumpkin pie spice
- 1/2 cup unsalted butter, melted
- 1 1/4 cups granulated white sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup canned pumpkin puree
- 3/4 cup buttermilk, at room temperature
- Prepare the streusel topping by mixing cold butter, brown sugar, flour, and salt until crumbly.
- In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
- Combine melted butter with granulated sugar; add eggs one at a time followed by vanilla and pumpkin puree. Stir in buttermilk.
- Fold wet ingredients into dry ingredients until just combined.
- Preheat oven to 350°F (175°C), fill muffin tin with batter, top with streusel, and bake for about 20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes in the pan before transferring to a wire rack.
