  • ½ cup packed brown sugar
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • For the filling: 1 large egg, ¼ cup packed brown sugar, pinch of salt, ½ teaspoon pumpkin spice, ¼ cup whole milk, ½ cup pumpkin puree, ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
