  • 3/4 teaspoon salt
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 350°F. In a mixing bowl, whisk together vegetable oil and both sugars until combined.
  2. Add pumpkin puree, eggs, vanilla, and milk; mix until just combined.
  3. Fold in flour, baking soda, spices, and salt until fully integrated.
  4. Fill muffin tins about three-quarters full and sprinkle cinnamon-sugar topping over each.
  5. Bake for 20-24 minutes until golden brown and springy to touch.
