  • 50 Grams (1/4 Cup) Granulated Sugar
  • 2 Tablespoons Butter, browned
  • 1 Large Egg, at room temperature
  • 1 Tablespoon Dry Milk Powder
  • 1 Teaspoon Salt
  • 5.3oz (2/3 Cup) Pure Pumpkin Puree
  • 1 Tablespoon Pumpkin Pie Spice
  • 406 Grams – 468 Grams (3 1/43 3/4 Cup) All-Purpose Flour
  • 150 Grams (3/4 Cup) Brown Sugar
  • 1 1/2 Teaspoon Ground Cinnamon
  • 1 1/2 Teaspoon Pumpkin Pie Spice
  • 3oz (6 Tablespoons) Butter, browned for filling
  • 4oz Cream Cheese, softened to room temperature
  • 2oz (1/4 Cup) Browned Butter, softened to room temperature
  • 1 Tablespoon Pure Vanilla Extract
  • 2 Tablespoons Heavy Cream
  • 180 Grams (1 1/2 Cups) Confectioners Sugar

Instructions

  1. Activate the yeast by mixing warm water with sugar and sprinkling yeast on top; let it froth for 5-10 minutes.
  2. In a bowl, combine browned butter, pumpkin puree, egg, dry milk powder, and salt. Mix with the yeast mixture.
  3. Gradually add flour until a soft dough forms; knead until smooth.
  4. Allow the dough to rise in a warm place until doubled in size (about 1 hour).
  5. Prepare filling by mixing brown sugar, cinnamon, and pumpkin pie spice; incorporate browned butter.
  6. Roll out the dough into a rectangle, spread melted butter, sprinkle filling evenly.
  7. Roll tightly into a log shape and cut into equal pieces.
  8. Place rolls in greased baking dishes; let them rise again for 30 minutes.
  9. Bake at 350°F (175°C) for about 27 minutes until golden brown.
  10. For frosting, beat cream cheese and browned butter; add vanilla, heavy cream, and powdered sugar until fluffy.
