  • 1 tbsp olive oil
  • 400g (6) chicken or turkey sausages
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic
  • 1/2 tsp dried thyme
  • 3 tbsp plain/all-purpose flour
  • 1 litre/4 cups chicken or vegetable stock
  • 2 bay leaves
  • 100g/1/2 cup wild rice
  • 3 potatoes (medium, peeled and cut into chunks)
  • 375ml/1 1/2 cups single/light cream or half-and-half
  • Salt to taste

Instructions

  1. Heat olive oil in a pot over medium heat. Remove sausage from casings and cook until browned. Set aside.
  2. In the same pot, sauté chopped onion, celery, and carrots for 10 minutes until soft. Add minced garlic and dried thyme.
  3. Sprinkle flour over the vegetables and mix well. Gradually stir in chicken stock to create a smooth mixture.
  4. Add bay leaves and wild rice, then bring to a simmer for 30 minutes.
  5. Stir in cubed potatoes and cook for another 15 minutes until tender.
  6. Finally, mix in the cream (or half-and-half) and season with salt to taste.
