  • 1 medium onion, freshly grated
  • 4 medium potatoes, grated and drained well
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt and freshly ground black pepper, to taste
  • 6 ripe tomatoes, diced
  • 150g fresh mozzarella cheese, shredded
  • Fresh dill, chopped
  • Olive oil for pan-frying

Instructions

  1. In a large mixing bowl, combine the grated onion and potatoes. Add in the eggs, flour, sea salt, and black pepper. Mix until well combined.
  2. Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of the potato mixture into the pan, shaping them into pancakes. Cook for about 2 minutes on each side until golden brown.
  3. In another bowl, mix diced tomatoes with chopped dill and half of the shredded mozzarella.
  4. Preheat your oven to 200°C (400°F). Top each pancake with the tomato mixture and remaining mozzarella, then bake for about 15 minutes until bubbly.
  5. Serve warm garnished with fresh dill.
