  • 1/2 cup powdered sugar
  • 3.4 oz box instant pistachio pudding mix
  • 1 1/2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 45 drops green food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, cream the softened butter until light and fluffy.
  3. Add powdered sugar, pistachio pudding mix, almond extract, vanilla extract, and green food coloring; mix until well combined.
  4. Gradually incorporate the flour until just mixed; do not overmix.
  5. Chill the dough in the fridge for about 30 minutes.
  6. Scoop dough into balls (about 1½ tablespoons each) and place on the prepared baking sheet.
