  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 (3.4 oz) box pistachio instant pudding mix
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • Coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 425°F and line muffin tins with liners.
  2. In a bowl, whisk together vegetable oil, sugar, eggs, almond extract, and milk until fluffy.
  3. In another bowl, combine flour, pistachio pudding mix, baking powder, and salt.
  4. Gently mix the wet ingredients into the dry ingredients until just combined; lumps are okay!
  5. Fill muffin tins about three-quarters full with batter and sprinkle coarse sugar on top if desired.
  6. Bake at 425°F for the first 6 minutes, then reduce temperature to 350°F and bake for an additional 11-12 minutes until golden brown.
  7. Allow muffins to cool for about 5 minutes before transferring them to a rack.
