  • 1/4 cup extra virgin olive oil
  • 1 1/2 pounds boneless skinless chicken breasts
  • 6 cloves garlic, chopped
  • 1 tablespoon smoked paprika
  • 1 tablespoon chopped fresh oregano
  • Chili flakes, Kosher salt, and black pepper (to taste)
  • 5 cups shredded lettuce
  • 3/4 cup diced avocado
  • 1/3 cup sliced peperoncini
  • 1/4 cup fresh dill, chopped
  • 1/2 cup crumbled feta cheese
  • 46 large tortillas
  • 1/2 cup basil pesto
  • 12 cups tzatziki sauce

Instructions

  1. Marinate the chicken by combining Greek yogurt, olive oil, garlic, smoked paprika, oregano, chili flakes, salt, and pepper in a bowl. Let sit for at least 15 minutes.
  2. Preheat the oven to 425°F (220°C) and bake marinated chicken on a baking sheet for about 25 minutes until cooked through. Broil for an additional 1-2 minutes for crispy edges. Slice thinly.
  3. In a bowl, mix shredded lettuce, diced avocado, sliced peperoncini, fresh dill, and crumbled feta.
  4. Warm tortillas briefly in the microwave. Spread basil pesto on each tortilla, layer with veggie mix and sliced chicken, and drizzle with tzatziki sauce before rolling tightly.
  5. Serve immediately or wrap in foil to enjoy later.
