  • 225g unsalted butter, softened
  • 225g dark brown sugar
  • 4 large eggs, beaten
  • 225g self-raising flour
  • 1 tsp mixed spices
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp molasses
  • 450g mixed dried fruits (raisins, currants, sultanas)
  • 75g chopped candied peel
  • 50g chopped almonds
  • 2 tbsp apple juice for soaking fruits

Instructions

  1. Preheat your oven to 150°C and grease a 20 cm round cake tin lined with baking paper.
  2. In a bowl, cream together softened butter and dark brown sugar until light and fluffy.
  3. Gradually mix in the beaten eggs, ensuring a smooth batter.
  4. Sift together self-raising flour and spices, then fold gently into the wet mixture.
  5. Stir in molasses, mixed dried fruits, candied peel, and chopped almonds.
  6. Pour batter into the prepared tin and bake for about 2 to 2.5 hours or until a skewer comes out clean.
  7. Cool in the tin for 10 minutes before transferring to a wire rack.
  8. Poke holes in the cooled cake and brush generously with apple juice to keep it moist.
