  • 1 cup light brown sugar, packed
  • 1/2 cup heavy cream
  • 1/2 cup light corn syrup
  • 2 cups chopped pecans
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper and spray lightly with cooking spray.
  2. For the crust, mix graham cracker crumbs and sugar in a food processor. Add melted butter and pulse until combined. Press into the prepared dish and bake for about 10 minutes until golden.
  3. For the cheesecake layer, beat cream cheese, sugar, eggs, vanilla extract, and salt in a mixing bowl until smooth. Pour over the baked crust and bake for another 20-30 minutes until set but slightly jiggly in the center.
