  • 1/2 cup smooth peanut butter
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350F (180C). Line cookie sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in smooth peanut butter, egg, and vanilla extract until well combined.
  4. Gradually add all-purpose flour, baking powder, baking soda, and salt, mixing gently.
  5. Fold in old-fashioned oats until evenly distributed in the dough.
  6. Stir in 3/4 cup of chocolate chips (reserve 1/4 cup for topping if desired).
  7. Scoop about three tablespoons of dough to form balls and place them on the lined sheets 2-3 inches apart.
  8. Bake for 10-12 minutes or until just set on top. Allow cooling on the sheets for at least ten minutes before transferring.
