  • 2/3 cup unsalted butter (melted)
  • 3 cups chopped peaches
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice (or water)
  • 3 tablespoons cornstarch
  • 3/4 cup flour
  • 1/4 cup large flake oats
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter (melted)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt; stir in melted butter. Press into an 8×8 inch pan and bake for 15 minutes.
  3. Toss chopped peaches with granulated sugar, lemon juice, and cornstarch.
  4. In another bowl, combine flour, oats, brown sugar, and cinnamon; mix in melted butter until crumbly.
  5. Spread peach mixture over baked crust; top with crumble. Bake for 35-45 minutes or until golden brown.
  6. Allow to cool before glazing with powdered sugar mixed with cream and vanilla.
