½ cup unsalted butter, room temperature
1 cup granulated sugar
2 large eggs
½ cup sparkling grape juice or sparkling apple vinegar
¼ cup whole milk
1 teaspoon vanilla extract
½ cup peach puree (fresh or canned)
1 cup unsalted butter, room temperature
3–4 cups powdered sugar, sifted
3–4 tablespoons peach puree
1–2 tablespoons sparkling grape juice or sparkling apple vinegar
Pinch of salt
Fresh peach slices
Candied peach or cherry (optional)
Sparkling sugar or granulated sugar
Instructions
Preheat oven to 350°F (175°C) and line a muffin pan with cupcake liners.
In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time to the butter mixture, then mix in the wet ingredients: sparkling grape juice (or vinegar), milk, vanilla extract, and peach puree.
Gradually add the dry ingredients to the wet mixture until just combined.
Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
Cool on a wire rack before frosting with peach buttercream made from butter, powdered sugar, peach puree, and sparkling grape juice (or vinegar).
