  • 1/2 cup chopped bell pepper

  • 1 (8 oz) can diced tomatoes without juice
  • 1/2 cup quick-cooking oats
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking tray with foil, coating it with cooking spray.
  2. In a large bowl, mix together salt, pepper, onion, bell pepper, egg, tomatoes, and oats until well combined. Gently fold in the ground beef until blended.
  3. Shape the mixture into a loaf on the prepared baking sheet.
  4. For the topping, mix ketchup, brown sugar, and mustard in a small bowl; spread it over the top of the meatloaf.
  5. Bake for about an hour or until the internal temperature reaches at least 160°F (71°C). Let rest for ten minutes before slicing.
