  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey sausage and cook until browned. Remove from pot but keep drippings.
  2. Sauté diced onion and minced garlic in the same pot until soft.
  3. Stir in drained tomatoes, chicken stock, dried herbs, and return sausage to the pot. Simmer for 10 minutes.
  4. Add ditalini pasta and cook until al dente—about 8–10 minutes.
  5. Lower heat and mix in heavy cream and Parmesan cheese until combined.
  6. Season with salt and pepper to taste, then garnish each bowl with fresh parsley before serving.
