  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1/4 cup flour
  • 2 eggs
  • 2/3 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 heaping teaspoon Italian seasoning
  • 3 tablespoons olive oil (divided)

Instructions

  1. Preheat oven to 400°F.
  2. Halve chicken breasts lengthwise and pat dry. Season with garlic powder, salt, and pepper.
  3. Set up a dredging station: one bowl with flour, one with beaten eggs, and one for panko mixed with parmesan and Italian seasoning.
  4. Heat two tablespoons of olive oil in an oven-proof skillet over medium heat.
  5. Coat each chicken piece in flour, dip in egg, then press into the breadcrumb mixture.
