  • 1 medium onion
  • 2 tablespoons avocado oil (or olive oil)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Let the chicken sit at room temperature for 30-60 minutes before cooking.
  2. Preheat your oven to 425ºF (218ºC) and line a baking dish with parchment paper.
  3. Place the chicken breast side up in the roasting pan after removing giblets and patting it dry.
  4. Stuff the cavity with onion halves for added flavor.
  5. Mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper to create a seasoning paste.
  6. Coat the chicken generously with the seasoning mixture.
  7. Roast in the preheated oven for 70-90 minutes until internal temperature reaches 165ºF (74ºC), basting occasionally.
  8. Allow the chicken to rest for five minutes before carving.
