  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 cups fresh cheese tortellini (or ravioli)
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp fresh basil or parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Season chicken with salt and pepper. In a large pot, melt butter over medium-high heat. Cook chicken until browned and cooked through (6–8 minutes). Remove and set aside.
  2. In the same pot, add more butter and sauté minced garlic for about 30 seconds until fragrant. Stir in crushed red pepper flakes.
  3. Pour in chicken broth, scraping any bits off the bottom of the pot. Add heavy cream and bring to a simmer.
  4. Add tortellini and cook according to package instructions (around 4–6 minutes) until tender.
  5. Return cooked chicken to the pot. Stir in Parmesan cheese until melted, letting everything cook together for another 2–3 minutes.
