  • 2 lb chicken (thighs and drumsticks)
  • 22 oz potatoes
  • 4 cloves garlic
  • 1/4 cup olive oil
  • 1/2 cup lemon juice
  • 1 Tbsp lemon zest
  • 1 1/2 Tbsp tomato paste
  • 1 tsp salt
  • 1/2 Tbsp dried oregano
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, tomato paste, lemon juice, lemon zest, salt, oregano, black pepper, and paprika.
  3. Chop potatoes into even pieces and pat dry the chicken and potatoes.
  4. Arrange chicken and potatoes on a baking sheet; pour marinade over them and coat well.
  5. Bake for about 40 minutes until chicken is cooked through (165°F internal temperature) and potatoes are tender.
  6. Let rest for five minutes before garnishing with parsley.
