  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 2 lb boneless, skinless chicken breasts
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 Tbsp avocado oil
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, Italian seasoning, Dijon mustard, salt, and pepper.
  3. In another bowl, combine halved grape tomatoes and mozzarella; season with salt and pepper.
  4. Heat avocado oil in an oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper and sauté until golden brown on both sides.
  5. Pour the balsamic mixture over the chicken and scrape any brown bits from the skillet.
  6. Top with tomato-mozzarella mixture and bake for 18-23 minutes until chicken reaches 165°F (75°C).
  7. Let rest for five minutes before serving.
