  • ¼ cup sliced red onion
  • ½ cup black olives
  • 2 sliced Roma tomatoes
  • 1/3 cup pepperoncinis
  • 1 cup croutons
  • ¾ cup extra virgin olive oil
  • 1 (.7 oz.) packet Zesty Italian Dressing Mix
  • 1/3 cup white vinegar
  • ¼ cup water
  • 1 tablespoon grated Romano cheese
  • 3 teaspoons sugar
  • 1 ½ teaspoons mayo
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder

Instructions

  1. Prepare the dressing by blending all dressing ingredients until emulsified. Chill in the fridge.
  2. Wash and chop all salad vegetables as per the ingredient list.
  3. In a large bowl, combine the salad ingredients (except dressing and croutons) and toss gently.
