  • 2 Tbsp olive oil
  • 1 small to medium yellow or white onion (diced)
  • 3 plump garlic cloves (chopped)
  • 1 tsp fresh rosemary (chopped; can sub thyme here)
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp tomato paste
  • 1 cup panko bread crumbs
  • 1/3 cup milk
  • 2 lbs. ground beef (85/15 or 93/7 works best)
  • 2 eggs (lightly beaten)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 cup ketchup
  • Non-stick spray or additional olive oil (for greasing the muffin pan)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a muffin tin.
  2. Soak panko breadcrumbs in milk for 2 minutes in a large bowl.
  3. Sauté diced onion and garlic in olive oil over medium heat until softened.
  4. Mix the sautéed onion-garlic blend with soaked breadcrumbs, ground beef, eggs, salt, pepper, and onion powder.
  5. Portion mixture into muffin tin slots and top each with ketchup.
  6. Bake for about 25 minutes until internal temperature reaches 160°F (71°C).
  7. Let cool for a few minutes before serving.
