  • 2 large eggs
  • 1/4 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 8 Oreo cookies
  • 2 tablespoons powdered sugar
  • 1 tablespoon dutch-processed cocoa powder
  • Pinch of salt
  • 2 tablespoons salted butter (melted)
  • 6 ounces milk chocolate (chopped)
  • 1 cup cold heavy cream
  • 2 tablespoons dutch-processed cocoa powder
  • 2 tablespoons powdered sugar
  • Pinch of salt
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs and mix with melted butter. Press firmly into a pie dish.
  2. Melt bittersweet chocolate and butter together. Mix in oil, cocoa powder, brown sugar, eggs, salt, and flour until combined. Pour over the crust.
  3. Bake for about 25 minutes until set but slightly gooey in the center. Cool completely.
  4. For the mousse, melt milk chocolate and butter. Whip cold heavy cream until soft peaks form; fold into the chocolate mixture and spread over cooled base.
  5. Whip heavy cream with sugar and cocoa powder until soft peaks form; spread over mousse layer.
  6. Refrigerate for at least four hours before serving.
