  • 4 tablespoons melted unsalted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 cup sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, combine chocolate cookie crumbs, granulated sugar, and melted butter. Press this mixture into the bottom of each liner.
  3. Bake for 5 minutes and let cool.
  4. Beat softened cream cheese until smooth; add sugar, cocoa powder, and flour until combined.
  5. Mix in sour cream, egg, vanilla extract, and red food coloring until smooth.
  6. Spoon the cheesecake mixture into prepared crusts and bake for 18–20 minutes or until slightly jiggly.
  7. Cool in the pan for 15 minutes before transferring to a wire rack; chill for at least 2 hours before serving.
