  • 1 tbsp olive oil
  • 1 medium onion (diced) (~150 g)
  • 2 cloves garlic (minced)
  • 6 cups chicken broth
  • ½ cup uncooked rice (or orzo pasta)
  • 2 cups cooked shredded chicken
  • 2 large eggs
  • Juice of 2 lemons (about ½ cup or 120 ml)
  • Salt and pepper to taste
  • Fresh dill (chopped) for garnish
  • Lemon wedges for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion for about 5 minutes until softened. Add minced garlic and cook for another 1-2 minutes.
  2. Pour in chicken broth and bring to a boil. Add rice (or orzo) and reduce to simmer for 10-12 minutes until tender.
  3. Whisk eggs until frothy in a medium bowl. Gradually add lemon juice while whisking.
  4. Temper the egg-lemon mixture by slowly ladling hot broth into it while whisking continuously.
  5. Stir the tempered mixture back into the pot along with shredded chicken, heating through for about 5 minutes without boiling.
  6. Season with salt and pepper to taste before serving garnished with fresh dill and lemon wedges.
