  • 1 can garbanzo beans (15 oz), rinsed and drained
  • 1 can cannellini beans (15 oz), rinsed and drained
  • 1 can kidney beans (15 oz), rinsed and drained
  • 1/4 cup red onion, finely chopped
  • 3/4 cup celery, chopped
  • 1 small cucumber, peeled and chopped
  • 3/4 cup fresh Italian parsley, chopped
  • 2 tomatoes, chopped
  • Juice of 1.5 lemons
  • 1/4 cup extra virgin olive oil
  • Ground pepper and sea salt to taste

Instructions

  1. Prepare the ingredients by rinsing all canned beans and chopping all vegetables into bite-sized pieces.
  2. In a large bowl, combine the garbanzo beans, cannellini beans, kidney beans, red onion, celery, cucumber, parsley, and tomatoes.
  3. In a separate small bowl or mason jar, whisk together olive oil, lemon juice, salt, pepper, and any additional seasonings you prefer.
  4. Pour the dressing over the salad mixture and toss gently until well combined.
