  • 34 salmon fillets (skin removed)
  • 2 tbsp olive oil
  • 1 cup chicken stock (unsalted)
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 5 garlic cloves (minced)
  • Fresh basil (for garnish)
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine dried basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and pepper in a small bowl.
  2. Rub half of the seasoning mix onto both sides of each salmon fillet.
  3. Heat olive oil in a skillet over medium-high heat. Sear salmon for about 5 minutes on each side until golden brown.
  4. Remove salmon from the skillet and set aside. In the same skillet, sauté minced garlic and sun-dried tomatoes for 1-2 minutes.
  5. Pour in chicken stock to deglaze the pan, scraping up browned bits.
  6. Stir in heavy cream and remaining seasoning mix; simmer until thickened (10-15 minutes).
  7. Return the salmon to the skillet, spoon sauce over it, and cook for an additional 3-5 minutes until done to your liking.
  8. Serve garnished with fresh basil.
