- 3–4 salmon fillets (skin removed)
- 2 tbsp olive oil
- 1 cup chicken stock (unsalted)
- 1/2 cup heavy cream
- 1/3 cup chopped sun-dried tomatoes
- 5 garlic cloves (minced)
- Fresh basil (for garnish)
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 3/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
- Combine dried basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and pepper in a small bowl.
- Rub half of the seasoning mix onto both sides of each salmon fillet.
- Heat olive oil in a skillet over medium-high heat. Sear salmon for about 5 minutes on each side until golden brown.
- Remove salmon from the skillet and set aside. In the same skillet, sauté minced garlic and sun-dried tomatoes for 1-2 minutes.
- Pour in chicken stock to deglaze the pan, scraping up browned bits.
- Stir in heavy cream and remaining seasoning mix; simmer until thickened (10-15 minutes).
- Return the salmon to the skillet, spoon sauce over it, and cook for an additional 3-5 minutes until done to your liking.
- Serve garnished with fresh basil.
