  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 sweet potatoes, chopped
  • 2 cans (28 oz each) diced tomatoes
  • 1 can (14 oz) red kidney beans, drained and rinsed
  • 1 ½ cups frozen corn
  • 3 ½ cups vegetable broth
  • 1 ½ cups dried green lentils
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion, garlic, and sweet potatoes.
  2. Combine all ingredients in the slow cooker: onion, garlic, sweet potatoes, diced tomatoes, kidney beans, corn, vegetable broth, lentils, chili powder, cumin, salt, and pepper. Stir gently to mix.
  3. Cover and cook on low for about 8 hours (or on high for around 4 hours).
  4. Once cooked, stir well and adjust seasoning if needed. Serve warm topped with diced avocado and fresh herbs if desired.
