  • 3 tbsp fish sauce
  • 3 tbsp sugar
  • 1/2 tsp black pepper
  • 3 tbsp cooking oil
  • 1 shallot, sliced
  • 2 tbsp chopped lemongrass
  • 2 to 4 chopped Thai chilies
  • 4 cloves garlic, chopped
  • 6 oz ground chicken
  • 4 cups cooked day-old jasmine rice
  • Chopped cilantro

Instructions

  1. In a small bowl, combine fish sauce, sugar, and black pepper; set aside.
  2. Heat cooking oil in a wok over high heat. Add sliced shallots, lemongrass, Thai chilies, and garlic; sauté until fragrant.
  3. Add ground chicken; cook until browned and broken apart.
  4. (Optional) Push chicken mixture aside and scramble two eggs in the empty space until set.
  5. Stir in day-old jasmine rice and pour sauce around the edges; mix well.
  6. Once heated through, remove from heat and fold in chopped cilantro before serving.
