  • 3/4 cup freshly-squeezed lemon juice
  • 1 1/4 cup granulated sugar (divided)
  • 3 tablespoons lemon zest (divided)
  • 7 egg yolks
  • 1 whole egg
  • 5 tablespoons unsalted butter
  • 1 1/3 cup heavy cream
  • 16 ounces mascarpone cheese
  • 1 teaspoon vanilla extract
  • 1 package Savoiardi ladyfingers
  • 3/4 cup water

Instructions

  1. Prepare the Lemon Syrup: In a saucepan, combine lemon juice, water, and sugar. Heat until sugar dissolves.
  2. Make the Lemon Curd: Whisk egg yolks, whole egg, sugar, lemon juice, zest, and salt in a bowl. Cook over low heat until thickened; stir in butter until melted.
  3. Whip Cream: Beat heavy cream until soft peaks form; fold in mascarpone and remaining sugar and vanilla.
  4. Assemble: Briefly dip ladyfingers in lemon syrup and layer half in a dish. Add half of the lemon curd and half of the mascarpone mixture. Repeat layers. Refrigerate for at least 6 hours.
