  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • Juice from 1 tablespoon lemon
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, sauté celery, carrots, and onions in butter and olive oil over medium-high heat for about 5-7 minutes.
  2. Add minced garlic and cook for another 30 seconds. Stir in flour and cook for 1 minute.
  3. Pour in chicken broth while stirring to dissolve flour. Add Italian seasoning and uncooked chicken breasts; bring to a boil.
  4. Cover slightly and reduce heat to simmer for about 15 minutes until chicken is cooked through.
  5. Stir in uncooked orzo and cook for another 10 minutes until tender.
  6. Remove chicken, chop into bite-sized pieces, return to pot, add lemon juice and parsley, then season with salt and pepper before serving.
