  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press firmly into the bottom of a 9-inch springform pan to form the crust.
  2. Bake the crust in the preheated oven for about 10 minutes. Let it cool completely.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Mix in vanilla extract and add eggs one at a time until fully incorporated. Stir in sour cream, lemon juice, lemon zest, and baking powder until creamy.
  4. Pour the filling over the cooled crust and bake for about 50-60 minutes until set but slightly jiggly in the center.
  5. Allow cooling in the oven with the door slightly open for an hour before transferring to the fridge for at least four hours or overnight.
