  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion (or 2 shallots)
  • 1 large carrot
  • 2 stalks celery
  • 1 clove garlic
  • 4 sprigs thyme (or 1/2 tsp dried thyme)
  • 6 cups turkey or chicken stock
  • 1/2 cup giant couscous
  • 2 cups cooked turkey or chicken
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp parsley (chopped)

Instructions

  1. Heat olive oil and butter in a pot over low heat. Add chopped onion, celery, carrots, and garlic along with thyme. Sauté for about five minutes.
  2. Pour in the turkey or chicken stock, add the cooked turkey and bay leaves, then season with salt and pepper. Bring to a boil.
  3. Stir in the giant couscous and cook over medium heat for about ten minutes until tender.
  4. Serve hot, garnished with chopped parsley.
