  • 12 mozzarella balls
  • 12 cheese tortellini
  • 24 cherry tomatoes
  • 12 fresh basil leaves
  • 12 green olives, pitted
  • 12 black olives, pitted
  • 12 slices turkey
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon white grape juice vinegar
  • Juice of 1/2 lemon
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons fresh oregano, chopped
  • 2 cloves garlic, grated
  • 1 teaspoon dijon mustard
  • 1 teaspoon sea salt
  • 1/2 teaspoon coarse black pepper
  • 1 pinch red pepper flakes

Instructions

  1. Cook the cheese tortellini according to package instructions until al dente. Rinse under cold water to cool.
  2. For the marinade, mix olive oil, vinegar, lemon juice, parsley, oregano, grated garlic, mustard, salt, pepper, and red pepper flakes in a jar. Shake well.
  3. Marinate mozzarella balls, cooked tortellini, and cherry tomatoes in a covered bowl with the marinade for at least 2 hours (or overnight).
  4. Assemble skewers by alternating ingredients: mozzarella balls, basil leaves, tortellini, olives, turkey slices, and cherry tomatoes.
