  • 2 tablespoons olive oil
  • 1/4 cup flour
  • Salt and pepper
  • 1 large russet potato (about 2 cups) (cut into cubes)
  • 3 large red potatoes (about 3 cups) (cut into cubes)
  • 3 stalks celery (sliced)
  • 3 large carrots (about 2 cups) (cut into 1/2 inch pieces)
  • 1 large onion (about 1½ cups) (diced)
  • 2 tablespoons butter
  • 6 large garlic cloves (about 1/4 cup) (minced)
  • 3/4 cup apple vinegar
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1/2 tablespoon granulated sugar
  • 2 tablespoons Worcestershire sauce
  • 1/2 tablespoon dried thyme
  • 2 bay leaves (small)
  • 1 tablespoon flour (to thicken)
  • 1 tablespoon cold water

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season beef with salt and pepper, dust with flour, and brown on all sides for about 5–7 minutes. Remove beef from skillet.
  2. In the same skillet, add more oil if needed, then sauté potatoes, celery, carrots, and onion until slightly browned (about 10 minutes).
  3. Add butter and minced garlic; sauté until fragrant (about one minute).
  4. Deglaze the pan with apple vinegar; then add beef broth, tomato paste, sugar, Worcestershire sauce, thyme, and bay leaves. Stir well.
  5. Return browned beef to the pot and cover tightly. Bake in a preheated oven at 350°F for about 1–2 hours until tender.
  6. If thickening is needed at the end of cooking time, create a slurry with flour and cold water; stir into stew while simmering.
  7. Adjust seasoning before serving.
